Waddup guys! It's Sunday already and I hope things are doing well with you thru out the past week (although the traffic had been crazy in Jakarta for the past few days). Back on TFJ this weekend and this time I wanna share with you how you can make the awesome guilt-free "semi" Paleo fried rice by using cauliflower to substitute the rice. Not only this dish has much lesser carbs, it's rich in protein and vitamins as well.
I bet all of you had heard about the fad diet, Paleo diet, which is named after the method in consuming foods that are likely available during Paleolithic era. The main idea of the diet is to consume veggies, fruits, legumes, meats, and many unprocessed foods. I got inspired to try this Paleo-related dish because my fiancee would like to eat a good proportion of food but not wanting to gain unhealthy weights.
So then I modified some recipes from across the internet and I got one for my own! I chose to make him this Paleo-style fried rice because it's easy to prepare, can last a couple of days in the fridge, and definitely healthier than other foods he buys in random restaurants. Imagine you can eat yummy regular fried rice with the same portion but half the calories. Isn't that the dreamy eating experience? Well, in order to make this dish, basically you're only going to need cauliflower as the main ingredient. Meanwhile for the other veggies and meats, you can modify them as you desire. Here's how you can recreate this easy yet healthy dish:

4 servings
Ingredients
1 head of cauliflower
200 grams of chopped chicken breast, marinated
1 cup of chopped red capsicum
1 bowl of chopped champignon mushroom
2 chicken eggs
2 tbs of chopped spring onion
2 tsp of virgin coconut oil
1 tbs of chopped garlic & onion
salt, pepper
Directions
Preparing the Cauliflower
1. Chop the cauliflower into bite size and rinse it well
2. Soak the chopped cauliflower with fresh water and salt for 10 minutes
3. Drain the cauliflower and put it into a food processor
4. Pulse the cauliflower to make the grains the size of rice
5. Dry the excess water from the cauliflower with kitchen paper towel
Preparing the Fried "Rice"
1. Prepare the pan by heating the virgin coconut oil
2. Stir the chopped garlic and onion until the aroma comes out
3. Put the chopped chicken breast and stir until all the meat's surface turns white
4. Put the chopped mushroom and red capsicum into the pan and sauté together
5. Put the rice-size cauliflower into the pan, stir, and season well
6. Last but not least, make an omelette separated with the fried rice
7. Serve together and garnish with spring onion
